Healthy, Simple, Amazing, and Fun!

When I lived in France, all the grocery stores had prepared healthy salads that I would grab for lunch. It was there that I became obsessed with Tabouleh, the laughing cow cheese (la vache qui rire), and a carrot salad called "Carrottes râpées" -- pronounced ra-pays. For a very simple lesson in french, râpé is the adjective to say something is grated... So really this recipe was then Grated Carrots. I know, sounds quite simple... and it is!
At any rate, Today I was prepping for Thanksgiving, and by prepping I mean literally making my Thanksgiving day easy and all about not having much to do:
Sweet Potatoes, Onions, Celery, Garlic... OH MY!

Well, while prepping, I found a large bag of carrots I had bought in the event I wanted to make carrot cake, carrot bread, or carrot pie. I have since then changed my carrot needs, and then as it it were meant to be, a flash back of my french days hit me... and without thinking about what I was doing I quickly whipped up a carrot salad that took this French favorite of mine, and gave it an American twist.
A quick and simple side for any occasion!
Carrotte Râpée Salade (Grated Carrot Salad)
What You Need:
1 1/2 cups Shredded Carrots
1/2 cup Mayonnaise
1/3 Red Onion, minced
3 Green Onions, chopped
1/8 tsp Black Pepper
1/8 tsp Sea Salt
1 tsp Fresh Parsley, minced
1/2 cup Shredded Cheddar Cheese
Super fast and simple! Simply mix the mayo, salt, and pepper. In a large bowl toss the carrots, onions and cheese, then fold in the mayo mixture until well combined.
I know this sounds so incredibly simple, but it is a wonderful side to any meal.... or as a snack all on itself!
