Sage Potato Au Gratin

So I made a twist to a common dish....... it was worth it...  I promise ;)
Complexity Level:  Easy
Sage Potato Au Gratin
What You Need:
5 Potatoes, Sliced thin (use a food processor)
2 cups Cheddar Cheese
1 cup Heavy WHipping Cream
3 Eggs
3/4 cup Mayonnaise
1 tsp Ground Sage
1 tsp Sea Salt
1/4 Ground Black Pepper
1/2 tsp Garlic Powder
1/2 cup Plain Bread Crumbs
2 tbsp Butter
Cooking Spray

This is, by far, an amazing recipe.  I was sitting around playing with my need food processor, and sliced a bunch of potatoes today, then though "Why not make up a new potato recipe!?".  And so this was born... and it is, by far, one of my new favorites!

To start, preheat the oven to 350 degrees Fahrenheit.

Next, whisk together the cream, mayo, spices, and eggs, then stir in the cheddar cheese.  This mixture will look as follows:

Grease an 8X8 baking dish with the cooking spray, and spoon about 1 tbsp of the mayo egg mixture to brush across the bottom.  Layer the dish with 1 layer of sliced potatoes, then spoon about 1/3 cup of the cheese mayo mixture over them.  Repeat for 4 layers.

To finish the top layer, cover with sliced potatoes, then top with the 2 tbsp of butter.  To do this, chop the butter into 1/4 inch pieces and place sporadically about the top.  Sprinkle this with the bread crumbs and cover the entire dish with aluminum foil.

Bake at 350 degrees for about 1 1/2 hours.  remove the foil to brown the tops of the bread crumbs, and either bake 15 more minutes at 400 degrees Fahrenheit, or turn on the broiler to brown.

This is an amazing winter dish that demonstrates just how wonderful the potato is....

Two quotes from a recent dinner party about these potatoes:

"A friend of mine made something like this earlier this week... but they were not nearly as delicious!  I WANT the recipe ASAP!"

"I'm moving for seconds.....  is that ok?!"

I hope this finds you as well as it did my household!

Best,
