Simple Sesame Couscous Salad

Light sesame flavor with a perfect sesame seed crunch!

Simple Sesame Couscous Salad
What you need:
1 cup uncooked Israeli Couscous
2 cups Water
1 tbsp Toasted Sesame Oil
2 tbsp Black Sesame seeds
2 tbsp White Sesame Seeds
3 Green Onions. chopped

Another simple amazing salad for the books!  If you are not already familiar with israeli couscous, I hope this inspires you to try it out.  For instance, this little pasta gem is not to be confused with any other ingredient, as it maintains its shape no matter how often you reheat it, cooks in minutes, and is awesome hot or cold!  Oh, and by the way, unlike many other pastas it also doesn't tend to clump when cooked.  YAYA!!!


In all, this ingredient is super fun, versatile, and simple to make.  I get mine in the bulk section of my favorite organic markets, but more and more I find it turning up in the supermarkets.  Win win! I've also seen it under the name "Pearl Couscous" or "Toasted Israeli Couscous".

So to start this delicious and light spring salad, bring your israeli couscous to a boil in 7-8 cups of water.  Cook for 4-5 minutes then drain.  It works best to rinse this under cool water, as the salad itself will be called cold.

Once cooled and drained, toss the pasta with the sesame oil. Finally fold in the remaining ingredients and chill at least 1 hour before serving. You can add more to this if you want, and if black sesame seeds are too hard to find just use plain.  I bet some ginger would make this amazing-ZING! But it's no lie when I say this refreshing salad will bring a peaceful sense of joy to your tongue, and will not overload your diet!
