I have to confess that I did not make it "skinny" and used real butter. Also-I used a large loaf pan, but it still wasn't 100% done at almost an hour and a half. That's my fault I know, but just figured I would post in case anyone else was going to try that. I should have just used my small loaf pan and then made muffins with the rest...ah well, the moist center was delish..I just didn't serve it to others! :) And, that darn tooth pick trick never works for me, I don't know what it is but it always seems to come out clean whether it is done or not!
