Chewy Coconut Chocolate Oatmeal Bars

Some days start out perfect, and then suddenly everything starts going south at once. You may react with screams, tears, frustrated sighs...  You may reach for a bar of chocolate or a glass of wine. You may need a beer. You may need milk or juice. You may even just need run. Whatever your go to stress relief is, I am telling you these bars can do the trick.

They are chewy, gooey, sweet, and rich. They are the perfect cookie bar. They are simple to change up and personalize. You can add this or take out that. No one said you had to be like me and make this exact bar. Cookies are funny like that- they can take on our personalities.

All I am saying is, when life gives you lemons, you tell them to squeeze off and have one of these cookies.... life will be back to nom nom normal once again.

I topped this batch with chocolate shavings too - to make it more amazing!

Chewy Coconut Chocolate Oatmeal Bars
What you need:
1 1/2 cups Quick Oats
1 cup Flour
1/4 tsp Salt
1 Egg
1 Stick Butter, softened
1 1/4 cup Packed Brown Sugar
1 tbsp Vanilla Extract
1 tbsp Coconut Extract
1 cup Sweetened Coconut Flakes
1 cup Semi Sweet Chocolate Chips + handful for top
1 tbsp Water

Preheat oven to 375 degrees Fahrenheit.

In a large bowl, beat the butter and sugar together until creamy. Next, add the egg, vanilla, water, coconut, and salt.

Stir in the flour, coconut flakes, and oats until combined. At this point you can mix in the chocolate chips.

Butter your 8X8 baking dish and pour in the batter. Finally, top with the remaining chocolate chips.

Bake 35-40 minutes, or until the top has browned and the edges are crisp.


I hope you enjoy! You can easily substitute your preferred butter or oil for this. I recommend not using margarine, but coconut oil would be amazing (and depending on your brand may add more coconut to the flavor!).

Hurry now and eat some! These will go fast!
You don't have o put the chocolate chips on top and you can just mix them all in.
These will still taste amazing, and will be a little less messy!
This recipe is great with nuts added! Also, you can kick this recipe up and make these mars into "kitchen sink bars"  by adding 1/2 cup butterscotch chips, 1/2 cup raisins, and 1/4 cup chopped walnuts!
