No Oil Cranberry Orange Bread

No Oil? No Butter? And it's still Moist..???
Yes! And super tasty too!
No Oil Cranberry Orange Bread
What You Need:
2 cups Flour
1 tsp Baking Soda
1 1/2 cups Sugar
2 Eggs
1/2 cup Flax Meal
1 tsp Vanilla
1/4 tsp Salt
1 tsp Cinnamon
1 cup Cranberry Juice
Juice and Rind of 1 Clementine

Cinna-Sugar
1/2 cup Sugar
1 tsp Cinnamon

To start, preheat the oven to 325 degrees Fahrenheit. Next, peel the rind off the clementine and mince. Set aside. In a large mixing bowl, mix the eggs, vanilla, cinnamon, salt, and sugar. Once combined, add the flax meal, cranberry juice, the juice of the clementine, and the minced rind.

 Finally, mix in the flour and baking soda until smooth.

Pour batter into greased and cinna-sugared mini loaf pans OR muffin tins OR an 8X8 baking dish. This recipe made me four perfect mini loaves. Bake for 30-40 minutes, depending on oven and pan type. For the mini loaves 35-40 was perfect!

If you did a good job greasing the pans (and covering in the cinna-sugar mixture) the bread should come right out! Great served hot, warm, or even cold. For me, I added a small dollop of butter on top since it was a guilt free recipe :)
