Lemon Lush

There is nothing like an Italian family recipe for a cool summer dessert...
Oh, and it's fun and easy to make!
Lemon Lush
What You Need
Crust:
1 cup Flour
1 stick melted butter
1 tbsp Sugar
1/4 cup chopped Walnuts

Filling Layer 1:
1 8oz. block Cream Cheese
1 cup Whipping Cream
1 cup Powdered Sugar

Filling Layer 2:
2 boxes Lemon Instant Pudding
3 cups Milk

Crust:
Pre-heat the oven to 350 degrees Fahrenheit. Next, mix together the flour, butter, sugar, and nuts, and press into a 8X11 baking dish. Bake for 15 minutes and let cool completely before adding filling.

Filling layer 1:
Beat together the cream cheese and powdered sugar. Set aside. In a large mixing bowl, whip the whipping cream with 1 tbsp of powdered sugar. Add the whipped cream to the cream cheese mixture and chill until ready to build dessert.


Filling Layer 2:
Although the boxes will tell you to use 4 cups of milk (for double recipe) we are going to make the pudding with 2 boxes of pudding mix and only 3 cups of milk. This way the pudding layer will set nice and firmly, preventing a mess when serving the dessert. Chill and let set.

Time to build! Spread 1/2 of the cream cheese and whipped cream filling across the nut crust. Next, top with all of the Lemon Pudding layer. FInally, top with the remaining cream cheese and whipped cream. Top with a chopped nut sprinkle and let chill at least 2 hours before serving.

If you do not let it chill long enough the layers won't cut well into servings and the dessert will be soft. This also happens as the dessert sits out too long (if that's possible lol). We took a photo for you to see what we mean:


This recipe came from my Mother in Law and it is fabulous! We made it for the family's meet and greet with my 6 month old son and it was a hit! Nothing like sunshine and cool lemon :)
