Oreo Gobs (also known as whoppie pies)

Hello delicious chocolate goodness! Thank you for finding a way into my home!!
Life just got TASTIER!

If you are someone that:
  1. Likes Chocolate
  2. Likes Baking
  3. Isn't afraid to enjoy a dessert
Then this recipe should find you well!

I will admit, I cheated a tiny bit... OK I have an infant, and I had a long day.. worse has happened!!! In place of homemade icing I did use store bought, but the recipe for the cake/ gob batter was on the fly from scratch... and was a success!

Oreo Gobs
What You Need:
1 cup (2 sticks) butter
2 Eggs
3/4 cup Granulated Sugar
1 cup Brown Sugar
1/2 cup Cream
1 tsp Vanilla
1/3 cup Cocoa Powder
1 tsp Baking Powder
1/4 tsp Baking Soda
2 cups Flour
Icing of choice

To start, preheat the oven to 325 degrees Fahrenheit.

Cream together the butter and sugars. Next add the cream, vanilla, cocoa powder, and eggs. Finally blend in the flour, baking soda and baking powder.

This was before the flour was added.
The batter is best if left to rest for 20-30 minutes. So step away and know soon you will have the best cake/ gob batter there is!

If making a cake - pour batter into a greased pan of choice (be it 2 8in rounds, 1 9X13, 2 8in squares) and bake for 40 min).

For Gobs: place about 1 tbsp of batter onto cookie sheet, spacing 2-3 inches apart. Bake for 12 minutes. Super simple, but yet so delicious!

Let the cakes cool then it's time to add that frosting! For a cake, well... go ahead and layer it thick! For gobs squeeze on a solid layer then top with another cooled gob.

In this case using this to cheat wasn't the best. My icing tastes better. But, c'est la vie!
I used two different flavors of frosting - not gonna lie my homemade icing would have made these even better, but again, I cheated... and sometimes cheating isn't the best. In this case, I didn't fall in love with the OREO icing I used. Next time, homemade from scratch it is :)

No matter how you tackle it, this recipe yields super delicate, soft, moist, and delicious results... go ahead and indulge... It's OK every once and a while!

I hope you enjoy! These were very simple to make, and OH SO MOIST! My goodness it was hard to believe how delicious they were... Thank goodness for Cardio ;) Losing baby weight isn't easy when you can make magic like these.

Thanks for baking with me and baby!
