Almond Joy Cookies

Candy bars are delicious... they are.. but when you warm them up to have that comfort food on a rainy day.. or at night before you settle down for the evening... well they don't stand up to the part. So what better way to have the decadence of your favorite candy baked into an ooey gooey warm and delicious cookie that can handle the task of being comforting and just what you needed to sit back and relax than this?

Everything you love about candy baked into a perfect cookie!!!
Complexity: Easy
Makes: 5-6 dozen 
Almond Joy Cookies
What you Need:
1 cup Shortening
1 cup packed Brown Sugar
3/4 cup Sugar
1/2 cup Unsweetened Cocoa Powder
2 tsp Vanilla
1 tsp Coconut Flavor (you can find this next to the vanilla at the store!)
2 Eggs
1/4 tsp Salt
1/2 tsp Baking Soda
1/8 cup Cream
2 1/2 cups Flour
1 1/2 cups Semi-sweet Chocolate Chips* 
1 cup Sweetened Coconut Flakes
1 cup Chopped Raw Almonds
*(awesome if you do 3/4 cup semi sweet, 3/4 cup white chocolate)

To start, cream together the sugars and shortening. Next, add the vanilla, coconut flavoring, coconut flakes, cream, salt, and eggs. Beat until combined and smooth, then add the cocoa powder and mix together.



Add the flour 1/2 cup at a time along with the baking soda, and finally fold in the chocolate chips and almonds. Cover and chill at least 1 hour.



When it's time to bake, pre-heat the oven to 325 degrees Fahrenheit. Roll the cookies into 1 inch rounds and place onto a lightly greased baking sheet. Space the cookies 2- inches apart to allow space for the cookies to form.


Bake for 13 minutes. Remove and let cool. These cookies will be soft, moist, and a serious journey in chocolate heaven! It is so fun to play with this batter too! I used the same recipe to make Chocolate Chocolate Chip cookies, but you certainly don't have to stop there. A good base for cookies allow you to use your imagination to create cookie masterpieces - and feel free to share! I'd love to hear all about your cookie art.  YUM!!!!
