"O" Olive Oil inspired Summer Caprese Insalata

Mixed greens lightly tossed in a barrel aged pinot noir and meyer lemon pressed olive oil vinaigrette, topped with a Meyer Lemon "O" Olive Oil Piccolini Caprese with a pinch of pink hawaiian sea salt and freshly ground white peppercorns.

The best part about this meal and post-- It's SIMPLE to make! I mean so simple no one aside from you and I truly needs to know. We can totally soak in the compliements of the time spent making such a fabulous treat.

With "O" Olive Oil and "O" Vinegar your food will literally come to life. Ok the mozzarella wasn't walking off the plate, but I will say this product comes in a sexy package, tastes better than imagined, and honestly compliments your food in a delicate, sophisticted manner.

So, without further ado, let's get to the kitchen and crank this out!


"O" Olive Oil Summer Caprese Insalata
What You Need:
Vinaigrette:
1/8 cup "O" Pinot Noir Vinager
1/4 cup "O" Meyer Lemon Olive Oil
1 Cloves Garlic
8 Basil leaves
1/4 tsp Pink Hawaiian Sea Salt
1/4 tsp White Pepper

Caprese
8 oz. "Pearl" or "Piccolini" Mozzarella
1 cup halved Red Grape Tomatoes
1 cup halved Yellow Grape Tomatoes
10 Basil Leaves, chopped
1 clove Garlic, minced
1 tbsp "O" Meyer Lemon Olive Oil
1 tsp Pink Hawaiian Sea Salt
1/2 tsp White Pepper, ground

3 cups fresh Mixed Greens

This recipe is 100% inspiried by the flavors and aromas of "O" Olive Oil brand. The truth is, I am one of few lucky bloggers to have the opportunity to sample, review, and share kitchen magic with the "O" Olive Oil brand. Dave over at eRecipecards.com had this brilliante idea to get spring and summer started with the flavors of California's best Olives and barrel aged vinegars -- an idea that is trulty genius! His site, eRecipecards.com is a digital recipe box! You can add your own, take pictures, and even become a blue ribbon member! It's loads of fun and the # of recipes on it are endless!

It's a recipe and review blog off, and I am one competitor that is just overwhelemed with joy and flavor -- How can life be any better? Free O Olive Oil, Free O Pinot Vinegar, and above all that - it's top quality!

It's best to start with the Vinaigrete. And if you can handle it, a little extra is good to have on hand for more occasions. But I say if you can handle it because, well.... this is so good. So delicioius.... so YUM!

 So to make it, put the garlic cloves, basil, salt, pepper, and vinegar in a food processor. Turn on, and let the ingredients mingle for 15-20 seconds. While still "on" slowly drizzle in the 1/4 cup "O" Meyer Lemon Olive Oil (yum!).




Pour this into a bowl and chill until it is time to plate. Meanwhile, since the dressing is ready to go, it's time to start the caprese. And once again, this is an easy thing to make. Add the halved tomatoes, the basil, salt, pepper, and garil in a bowl and toss to evenly spread out the ingredients. Drizzle in the "O" Meyer Lemon Olive Oil and toss to coat. Place aside or chill until ready to use.


Finally all that is left is to toss your mixed greens with the vinaigrette you made earlier. Toss to coat your greens and plate a bed of the flavor packed greens on each plate to be served. Top with the caprese and Viola! A salad that will not only be breathtaking but taste amazing too!


An amazing plate of delicious flavors that will not only leave you house smelling fresh, your breath happy, and your tongue amazed.... but also you friends and family asking "How" and "When did you have time!?"....
