Fire Roasted Salsa

There is nothing like a fresh, addictive, salsa....
...and then there was none! Opps ;)
Complexity Level: Easy
Fire Roasted Salsa
Ingredients:
1 12oz. Jar Roasted Red Peppers
1 Habanera (remove stem leave in seeds)
1 Jalapeno (remove stem, leave in seeds)
12 Roma Tomatoes
1 bunch Cilantro
2 ½ Limes
1 tbsp Salt
1 ½ Red Onions
6 cloves Garlic

To start, roughly dice your tomatoes, onion, and halve the limes. Place about 6-7 roma tomatoes into a food processor with the bunch of cilantro (roughly cut and de stemmed), salt, 6 garlic cloves, and the juice from 2 of the limes. Turn the food processor on and puree.

Pour this into a large mixing bowl, and return the food processor for a second round. Place the remaining tomatoes, onion, the rest of the lime juice, and the roasted red peppers into the food processor, but this time pulsate 10-12 times to chop the ingredients, not puree. In doing this the salsa will have a smooth and slightly textured consistency.

For more heat, add more jalapeno and habanera. This recipe as is has a zing, is highly addictive, and will leave even the picky eaters happy! The spice is mild to medium, depending on your palette! If a milder salsa is what you crave, remove the seeds from the jalapeno and skip on the habanera. This will give a nice light heat index and make for a fabulous mild dip!

**Make it Hotter! Grill your Habanero and Jalapeno before adding to the salsa, and doulble or triple up on them to really spice up your night!

Thanks for dipping in!

    1. Thanks Jessica! The best part is you have control of how chunky or not you want it with the food processor. Me, I like chunks of yumminess! And those roasted peppers gave it a sweet side, while the habaneros (I used 2 to be crazy!) gave it some personality! I hope you enjoy!
