Creamy Dill Dressing

Dressings are something that you can either fall in love with, or run like hell from. SOme are to die for, others.... they leave you asking "why?!" But lucky for us, we are in control of our recipes, our food, and yes, BB is also proud to be in control of her own condiments. Sure, making homemade mayo or fresh BBQ sauce can gobble up time when we all love to be gobbling up success in the kitchen, but there comes a time when we must stand up and take what we can!

Today, I was craving a dill dressing. See, I am a known pickle addict, and I am not ashamed to say if need be, I could just eat a sprig of dill. But I know I am one in few, and although I Am not alone in the world of pickle junkies, I have a hunch that many like the flavor of cool and creamy dill.

So on my gorgeous wooden cutting board awaiting their fate sat my head of lettuce, my gorgeous yellow onion, a crisp cucumber, and my fresh, vine ripened tomato. All alone waiting for me to come and make them complete.... waiting for a dressing to cover them up and a plate to let them rest.


And I thought, "Aimee! Why not make a creamy dill dressing?" And I looked around the kitchen knowing no one was watching.... what's the worse that could happen? I eat it all?

SO here it is. The dressing that won my heart, and drenched my vegetables. The dressing that would be perfect for potato salads, pasta salads, salads, or even a dip. And before we go on I must say..... It. Was. Delicious!

Creamy Dill Dressing
What You Need:
1 1/2 Lemons, Juice + Zest of 1
1/4 cup Apple Cider Vinegar
1 tbsp Dijon Mustard (Whole Seed)
2 tbsp Fresh Dill
Salt
Pepper
3/4 cup Mayonaise

To make a good dressing is such a blessing. But to make it in 5 minutes or less -- a miracle! Thank heavens for these quick pick me ups!

To start, place the zest of 1 lemon, juice of the 1 1/2 lemons, dill, mustard, and vinegar in a medium mixing bowl. Whisk to break up the mustard and combine. Add a pinch of salt and pepper, and the mayonaise. After mixing do a taste test - does it need more dill? more salt? more mustard (yum?). If not, taa-daaa! Mission Dressing is completed.
