Orange Craisin Oatmeal Cookies

OMGoodness these cookies are TO DIE FOR!
The BEST cookies I have ever made. I ate way too many... and might make more!!
Complexity Level: Easy

Whole Wheat Flour and Flax seeds are hidden in these simple, soft, chewy cookies of love. I cannot tell you enough how delcious these are -- you just have to try them out for yourself! I kid you not, my Neighbor came over and we baked these up.... about a dozen cookies later we realized that we created something magical!

Orange Craisins Oatmeal Cookies
What You Need:
3 cups Rolled Oats
1 1/2 cups Whole Wheat Flour
1 cup Packed Brown Sugar
1/3 cup Granulated Sugar
2 tbsp Honey
1 tsp Cinnamon
2 Sticks Butter
2 Eggs
1/2 tsp Salt
1 cup Craisins
1/2 cup Flax Seeds
1 tsp Orange Extract
1 tbsp Orange Zest

To start, pre-heat the oven to 350 degrees Fahrenheit. Beat the eggs with the sugars and butter. Next, add the vanilla, orange zest, honey, cinnamon, orange extract, and salt. If using a kitchen aid mixer, these next steps are on setting 2:

Slowly add the flour and oats1/2 cup at a time. The mixture will be thick but do not fear, this is the perfect blend!

If using a hand mixture or mixing by hand, just add the oats and flour 1/2 cup at a time, and mix well, scraping down the sides and folding it all together.

Once combined, the last step is to fold in the craisins and flax seeds. These give the cookies a serious edge that will leave those around you completely envious, because you have found a way to hide whole wheat flour and flax seeds in soft delicious bite sized cookies.... yum.

Place about 1 tbsp of dough per cookie 4 inches apart on a greased baking sheet, and bake 12-15 minutes. Remove from oven an cool. These are moist, soft, and full of fresh orange flavor. Absolutely the BEST cookies for a sunny day!

Thanks for Baking with me!
