Spring Grilled Salmon w/ Lemon Caper Butter

Salmon is such a simple, delicate fish that leaves us satisfied, full, and happy.
I love simple recipes on perfect spring days!
Complexity Level: Easy
Spring Grilled Salmon w/ Lemon Caper Butter
What You Need:
Salmon
1 lb. Salmon Filet
1/2 Lemon
Pinch salt
Pinch Pepper
1/2 tsp Ground Coriander

Lemon Caper Butter
1 clove Garlic, minced
1/2 Lemon
1/4 cup Capers
1 shallot, minced
1/4 cup Mushrooms, finely chopped
3 tbsp Butter
1 tbsp Olive Oil
1 tbsp Black Peppercorns, whole

To start, squeeze some fresh lemon juice into a small mixing bowl. Using a fork,stir in a pinch of salt and pepper, and add the 1/2 tsp of ground coriander.  Rub this mixture into the salmon filet and let it sit for 10-15 minutes.

While you are waiting for the lemon juice to flavor the meat, heat your grill. Drizzle a small amount of olive oil over the met side of the salmon, and lay skin side up on the grill over medium flame. Let this cook for 6 minutes, the turn at a 90 degree angle to give the best grill marks.  Let this cook another 6 minutes before flipping to skin side down. Depending on how well done you like your salmon, leave this on the grill for 5-10 minutes. I like a good crunchy skin, a well done fish, and s juicy meal, so I'd say its perfect after 5-6 minutes once flipped onto the skin side. Of course depending on how hot your grill cooks, it's always best to eye ball your food as it cooks.


While the salmon is on the grill, add 2 tbsp of butter and olive oil for the caper butter to a medium skillet and bring to heat.  Add the minced garlic and shallot, and begin to sweat out some flavor. After about 1 -2 minutes, and before the garlic browns, add the mushrooms, capers, and pepper corns.  Toss together to heat through, squeezing in the fresh lemon juice.  Let this simmer on medium-low heat.


When the salmon is removed from the grill, let it sit for about 2 minutes. During this time, ass the last tbsp of butter to the hot caper butter mixture. Spoon the desired portion of caper butter onto your salmon filet and viola! A delicious meal you can't resist!

If you do not want a family style serving, it is good to buy your salmon in 6-8oz. portions, planning on 1 per guest. This fish, with it's lemon kiss and smokey zing, is awesome with fresh steamed broccoli and cauliflower...oh and for me, some buttery corn on the cob! Yum!

  2. Thanks Jennie! We had some spring weather, and being in the mountains, I had to take advantage! Sunny skies, tulips blooming....the perfect time for grilling salmon! And you're right, caper butter does make everything better!!!
