Skinny Cinnamon Chip Banana Bread

Skinny Cinnamon Chip Banana Bread:  
A wonderful experiment on a spring like day!


OK first and foremost I have to get it off my chest:  Last night I slept with a window open!!!

OMgoodness, I don't mean to over excite myself, and I am sure I am way premature on this one, but the cool breeze was something I have missed during these many past ice cold winery days.

Sure snow wasn't in full force this past winter, but I will say, Mother Nature did not hold back on the sub awesome days of bone chilling cold and wet rainy days.

But I will attest that I have had the sheer joy of not just a few days of sunshine (albeit I worked through them, but the drive to and from work we quite enjoyable) but now also a furnace free night!  

And this means, once again I am faced with, the revelation that summer is soon to follow.  And summer in a nut shell means, I have got to start working out again.  I miss my friend "gym"!  (I am currently lacing up running shoes -- this is going to be a painful one!)

And with that comes delicious treats... but in light of the season change, I have focused on supplementing foods for certain "deadlies" like butter (I know, I know, butter is pretty much a vegetable in some books -- Liam debates it being a carb), mayo, etc.

And then it hit me.  I had bananas that were over ripe and some sunsweet butter replacement in the fridge!  BINGO!  I shall create a fabulous Banana Bread with no butter!


ANd thus was born my newest guilt free recipe, that I will say without doubt, it AWESOME!!

Skinny Cinnamon Chip Banana Bread



Skinny Cinnamon Chip Banana Bread
What You Need:
4 Bananas (very ripe)
1 cup Sugar (or 2/3 cup substitute)
1/2 cup Butter Substitute
1/2 cup Sour Cream
1/2 tsp Salt
2 Eggs
1 tbsp Vanilla
3 cups Flour
1 tbsp Baking Powder
1/2 tsp Baking Soda
1 bag Cinnamon Chips

To start, preheat the oven to 350 degrees Fahrenheit.  Next, beat the eggs, butter substitute, sour cream, salt, sugar, and vanilla.


Once blended add the bananas and beat to combine.  It's ok to have some chunks left of the bananas, they will melt into the brad as it bakes later on.  And they are delicious when you get a bite of them!


Mix the flour, baking powder, and baking soda together in a large bowl.  Slowly add the dry ingredients 1 cup at a time, until combined.  Do not over mix, just mix to combine.  Fold in the cinnamon chips.

Pour the batter into 2 well greased loaf pans, or fill muffin tins.

If making loaves, bake for 1 hour.  If after an hour a tooth pick doesn't come out clean, bake 15-20 more minutes.  if making muffins, fill the tins almost to the top, then bake for 30-35 minutes.


Excellent tasting, super simple, and deliciously healhty!!!  I Hope you enjoy as much as I did!!

    The best part is, the substitute doesn't taste like prunes (or have prune affects!). And yes, cinnamon chips with bananas -- Yummmmmtastic!

  3. Sounds yummy and I've been conducting a banana experiment that is ending tomorrow with their conversion to bread so the timing is great but what are cinnamon chips?

  4. Heidi!!!! I hope you try thus! CInnampn chips are like chocolate chips and can be found in the baking aisle. If you want to skip them use 1 tbsp cinnamon and mix it into the batter!!! Let me know how it goes

  6. I made this for Easter brunch (and just failed to post when I did) and it was great! I have to confess that I did not make it "skinny" and used real butter. Also-I used a large loaf pan, but it still wasn't 100% done at almost an hour and a half. That's my fault I know, but just figured I would post in case anyone else was going to try that. I should have just used my small loaf pan and then made muffins with the rest...ah well, the moist center was delish..I just didn't serve it to others! :) And, that darn tooth pick trick never works for me, I don't know what it is but it always seems to come out clean whether it is done or not!   7. Leslie -- I am so sad it didn't cook for you. Being such a dense recipe it sure does take it's time baking! I liek the smaller laof pans to speed up the process, or you can thin out the recipe slightly to let it bake quicker, or just let it go for 1-2 hours.
