Habanero Baked Chicken

If you like a kiss of heat, then this is one recipe to seek!
Complexity Level:  Easy
Makes 3-4 Servings
Habanero Baked Chicken
What You Need:
4 Chicken Breasts
2-5 Habaneros (ok, thats a range alright, but it's up to you!)*
1/4 cup Hot Sauce
1 1/2 tsp Garlic Powder
1 Red Onion, Quartered
Olive Oil
1 tbsp Ground Pasilla
1/2 tsp Black Pepper
1 tsp Sea Salt
1 tsp Rum
*Only 2 = A Light kiss of Heat

To start, halve your Habaneros and place into a skillet with 3 tbsp Olive Oil.  Heat over medium heat for 1-2 minutes to infuse a nice spice into the oil.  Meanwhile, rub your chicken breasts with the rum, black pepper, pasilla, garlic powder, some of the hot sauce, and the sea salt.

Place the chicken into the skillet with the peppers and sear each side, 4-5 minutes.  Remove from the skillet and place on a baking sheet.

Place the quartered onions around the chicken, and more habanero if seeking extra heat.  Drizzle the oil from the skillet over the chicken, and top with more hot sauce.  Wrap the baking pan tightly with foil, and bake at 350 degrees for 1 hour.

After baking let sit 5 minute then serve.  This recipe is super simple and causes minimal dishes (although a sink of dishes show for a great day in the kitchen!).  The foil helped steam the chicken, so as you cut into each flaming breast, the juices will spill out and cause you to crave seconds!

My husband made 2 burritos with this recipe, then for lunch the next day we made him a buffalo chicken salad!  Now thats 2 meals in one that are worth cooking for!

I hope you enjoy as much as he did!
