For me, I found myself wanted to open all the windows, air out all the winter blah and walk around town. And so I did! And a few hours later... and let's just say various trips to stores, I not only got an adorable new spring outfit, but ingredients for a wonderful meal!
Let's face it: Summer IS coming... and yes I love to cook (who would've guessed?!!). That said, I may or may not have put on a few unwanted pounds that the sun does NOT want to see! So in walking aobut and shopping about, I found myself dreaming up of recipes for healthy, simple, low fat foods...
And I have to say, I almost called my favorite restaurant to tell them what I just came up with so others could have the instant gratification of a mouth full of heavenly goodness!!!
I am a Vegetarian, but in recent light I have added some seafood to my diet, just for nutrition. And, thought rare, when I do make seafood, I try to come up with a unique twist that will leave me feeling healthy and light.
Well this hot and sunny day brought out the best in me. I fired up the grill, steamed some veggies, and peacefully ate myself happy! The meal that left me is sheer exctasy:
Grilled Lemon Ginger Swai w/ Steamed Veggies
Lemons and Ginger should be gilled together more often!
Makes1 serving per Swai Fillet used
What You Need:1 Swai Filet per person
Juice of 1 Lemon per Filet
Sea Salt (I used pink hawaiian)
Black Pepper
1 Whole Garlic Clove
1/4 tsp Ginger per Fillet
Sunflower Oil (any oil will work)
To start, place your filets on a prepping plate/ station, and rub them with 1/2 Lemons worth of Lemon Juice, 1/4 tsp Ground Ginger, a light pinch of Black Pepper, and a healthy pinch of sea salt.
Lightly spray/ rub each filet with cooking oil, and set back on the plate to transfer to your grill.
Unlike many fish recipes, I went for it and just grilled the fish on the grill. No foil, no drama. And it was perfect! As the fish cooked, I squeeze fresh lemon juice over the filet to spark up some flames and add more flavor. I sent through half a lemon for 1 filet, but was quite generous. I think stretching 1/2 lemon for eery 2-3 filets would work just fine!
After about 8 minutes on the grill the fish is done. Simple, healthy, and fast! To save time I steamed my veggies while the fih cooked.
This was, and I will say it again and again, awesome! I wish I had made more, but then again, I was good and didn't eat more than my share ;)

DeleteI actually had to Google Swai. It is not a fish I am familiar with as I investigate I realize I have to find out more as the price points are great.

ReplyDeleteI stumbled upon it on one of my many voyages to the grocery store (I have a hobby of finding foods I have never had before, then make up recipes with them!)
So I found Swai and thought "Well I never made this, never ate it, but I am craving ginger and lemon!" and Viola!
This was a fabulous meal, and you're right: It's such a budget friendly fish and a flavorful healthy choice!
