Cranberry Rye Bread Pudding

Why do so many people forget about the Rye?
Complexity Level:  Easy
Makes 4-6 Servings
Cranberry Rye Bread Pudding

Total Prep Time:  15 minutes
Total Bake TIme:  90 minutes.

What You Need:
6 Eggs
6 Pieces Rye Bread
1 1/2 cups Cream
3/4 cup Sugar
1 tsp Cinnamon
1 tbsp Vanilla
1/2 tsp Salt
4 tbsp Butter
1/2 cup Pecans
1 cup Craisins

To start, preheat the oven to 350 degrees Fahrenheit.  In a large mixing bowl, beat the eggs together with the sugar, cream, salt, vanilla, salt, and cinnamon.

Once beaten, dice the bread into cubes and add the bread to the egg mixture.  Let this sit 10 minutes so the bread and soak up all the yummy flavors in the egg mixture.


After the bread has sat, fold in the craisins and pecans, and pour the raw pudding into a well greased 8X8 baking dish.


Cover with foil and bake 30 minutes.  Remove the foil and bake for 1 more hour.  Remove and let cool 15 minutes before serving, or chill and serve cold.


Either way, this bread pudding is absolutely delicious, and the boldness of the rye bread mixed with the sweet cinnamon flavor makes for a wonderful taste adventure!


I served mine with some vanilla ice cream and of course, a smile!  Yum!
