Spinach and Sundried Tomato Stuffed Pork Loin (Dairy and Gluten Free!)

Some days call for snacks... others a hearty feast.
This was one hearty (but Healthy) Feast!
Makes 6 servings
Complexity Level:  Easy
Spinach and Sundried Tomato Stuffed Pork Loin
What You Need:
1 Pork Loin (about 2-3 lbs)
12 oz. Frozen Spinach, thawed and drained well
15 Sundried Tomatoes (about 1 cup dried, loose)
1 tsp Salt
1/2 tsp Black Pepper
6 leaves Basil
5 cloves Garlic, peeled
1/4 cup Balsamic Vinegar
1 tbsp Olive Oil

Hardware:
2-3 ft. Butcher Twine, cut into 7 inch strips

This is absolutely amazing.... it's impressed my mother, my husband and myself.  And the best part -- the BEST part:  It's simple to make!

To start, place the basil, spinach, black pepper, salt, garlic, vinegar, and sundried tomatoes into a food processor.


Turn the processor on (not pulsate but full on).  Slowly add the 1 tbsp of olive oil then turn off.  The mixture should look as follows:


Next, butterfly your pork loin and press as much filing as you can.  If you have extra, be sure to not get any raw pork on it, because this spinach mixture is AWESOME on pita brea, crackers, and/or melba toast.  I mean why not enjoy all you can... right!?

Press the filling onto the pork loin and roll.  Tie 5-6 strings of the butcher twine around the loin to hold the filling in and the rolled shape.  Sprinkle a small amount salt on the raw pork.




Heat a large skillet with 2 tbsp Olive oil.  Brown each side of your loin to sear in flavor -- trust me, a good golden hue means the pork will taste perfect!


Add 2 cups of water and 1/2 a yellow onion to the skillet, cover with foil, and bake at 350 degrees Fahrenheit for 1 hour.


Remove from the oven and let sit 10 minutes before slicing.  The colors will be gorgeous!  The garlic cloves that were minced in the processor will melt into the pork, and the vinegar will caramelize!

For more flavor, while the pork is resting, simmer the drippings in the skillet to reduce.  This will be awesome drizzled over the pork - -the flavors will condense and it will perfectly seal the amazing flavor of this meal!

A kitchen full of dishes means the house is filled with love!!!

I hope you enjoy!  My mother was impressed, and we kept this healthy to make it minimal Weight Watchers points!  Talk about a win win -- this was a Grandslam!

    It is a lighty version of what normally is full and hearty. And although no cheese, dairy, or bacon was added, it was a serious hit with the family! Peggy -- AWESOMENESS pretty much did sum it up!!! lol
