Italian Pizzelles

A flashback of the good days in Italy...

Complexity Level:  Easy*
Italian Pizzelles
What You Need:
6 Eggs
3 1/2 cups Flour (Can use Gluten Free)
1 1/2 cups Sugar
1 cup Melted Butter (cool not hot)
1 tbsp + 1 tsp Baking Powder  (about 4 tsp)
2 tbsp Anise Flavoring (you can find this near the vanilla extract)
1 tbsp Vanilla Extract
*Note:  You do need a pizzelle griddle.

Start by heating your pizzelle griddle.  While the griddle heats beat your eggs with the sugar.   In a small sauce pan, melt the butter with the anise and vanilla.  Do not bring this to a simmer, only heat to melt.  Add the butter and anise to the egg mixture and stir.


Now you will want to sift together the flour and baking powder, then add it scoop by scoop to the egg mixture.  Do not beat this portion, but rather fold in the flour.  If using a kitchenaid mixer, beat this together slowly adding 1/2 cup of the flour at a time on setting 2.  Over mixing may make this a tough dough once baked.


The mixture will be sticky do not fret!  The baking powder will also cause it to puff slightly -- and this is a good thing!

Scoop about 1 tbsp of the dough onto each center portion of the griddle and cook until the steam stops rising from the iron (about 30-35 seconds).  Next, pull them off the griddle and lay them on a cooling rack.  Do not try to peel off the excess until they cool -- they are soft when warm, crispy when cool.


If your griddle is not already seasoned, brush with cooking oil -- do not use spray or butter.

These are just gorgeous, and any one can make them!  Though it takes time to go through the batter, it is a fun, simple cookie that even kids can help you make (just watch their fingers on the hot griddle).


 My mother bought my griddle from Bed Bath and Beyond for only $40 (thanks mom!!!)  I tell you one thing, it was more than worth it!

I hope you enjoy!  My mother was in town, and she has never made these.... we had a great time working through the batter!  She even called my dad and grandmother (both pizzelle fanatics!) to say that this might be the best recipe yet (they are picky!!)  In fact, her carry on has 3 dozen in it!  Be careful mom!!



So the next time you hear someone complaining about pizzelles being hard to make, or the batch not tasting good, refer them here!  They are easy, delicious, and delicate treats!

    And I don't know how it happened but this recipe I made seriously created amazing pizzelles... we ate half a dozen each!

  10. These look delicious! We make something similar to these for our church smorgasbord every year, but we call them rosettes. Different looking press, but the ingredients are very similar. And they're delicious! Great job!

    Little Housewife -- I must say, I did first buy one with a different design, and my mother made me return it, so I have no idea what it would have looked like cooked. BUt I am happy we got this one instead, they were gorgeous!!
