Fiesta Tuna Salad (Mayo-Free!)

This is a serious winner -- and it's amazing no matter how you serve it!
Complexity Level:  Easy
Fiesta Tuna Salad (Mayo-Free)
What You Need:
2 cans Tuna packed in water, drained
2 tbsp Fat Free Greek Yogurt
1 cup Frozen Peas, thawed
1/4 cup Chopped Cilantro
Juice of 1 Lime
1 tsp Garlic Powder
3 Tomatoes Diced (you can also serve in hollowed tomatoes -- use the inside!)
2 Avocados, diced
1 Red Onion, finely chopped
1 Jalapeno, mined (remove seeds and vein if not a heat seeker!)
1 can White Beans, drained and rinsed
1 can Black Beans, drained and rinsed
Salt to Taste

I made this today on a whim.  I was craving chips and dip, wanted cowboy caviar, and didn't know what to do.  So I started throwing things together.  First, I made a Pico de gallo... but then I realized eating half a bag of tortilla chips was not the best idea.  And so I went a few steps forward and came up with what now is, a Bargain Bites favorite!

To start, place the tomato, beans, avocado, red onion, cilantro, peas, garlic powder, and minced jalapeno in a large bowl.  Squeeze in the juice of the lime and add salt to taste.


Next, add the tuna and yogurt and stir.  Taste to check salt, and add more if needed.  I serve this in a hollowed out tomato alongside melba toast, and just added the center of the tomato to the mix.  I have no issues with more veggies in my food!  And man, this was so good.  The frozen peas were a perfect touch!  Who would've thought!

Olives would make this better... I just ran out (sad face)

    1. Oh I am so happy you find it appealing! I too am an avocado junkie! THey are 2 for $1 this week at my local grocery store -- I had to use them!

  2. There is nothing better than a good tuna salad. I've just made some for my lunch with lemon, onions and olives, but I'm going right now to put some avocado in there. I also sometimes put a gerkhin in there as well.

  4. Yum! I never think to put anything in peppers besides the usual stuffed peppers ingredients. I'll be making these this summer when all the peppers are growing in my garden!

  6. @Emily -- I had used a tomato, but OMG yes, PEPPERS work perfectly -- and are so fresh from the garden ;)

    Peppers, avocado shells, tomatoes, cucumber cups, limes (awesome for drinks to float a shot), all are wonderful things to use as a serving dish -- and it's minimal clean up for you! I wish I had some peppers around .... I hear they are on sale this week! I am Craving stuffed banana peppers!
