Quinoa and Goat Cheese Salad

A light salad with fresh vegetables and goat cheese crumbles!
Another GF and Low Fat Choice for the 2012 books!  Yum!
Complexity Level:  Easy
Quinoa and Goat Cheese Salad
What You Need:
2 cups Cooked Quinoa
1/4 cup Goat Cheese Crumbles
2 cups Diced Cucumber
1 Roma Tomato, diced
1/2 Red Onion, diced
1/4 cup Chopped Roasted Almonds (I favor the smoked kind!)
Salt and Pepper to Taste

To start, if you haven't already, prepare the quinoa.  I cook this like rice, 1 cup Quinoa, 2 cups Water, 1 tsp Salt.  Bring to boil, stir, cover, simmer.  Let this simmer 15-20 minutes.  Turn off heat, stir, cover, walk away.  I let this sit 5 minutes then drain and rinse.

Ok, now that you have the quinoa ready to go, the rest is super simple, and you are more than welcome to make changes if needed (aka adding oil or vinegar or even more veggies/ fruits/ nuts).  This was, I wil lsay, totally tasty as is:

Mix to gether the quinoa, goat cheese, lemon juice, and diced veggies.  Add salt and pepper to your taste preference.  I say, let this cool at least an hour, but it's still good at room temperature.

The goat cheese is so flavor rich the quinoa hardly needs much else, but if you want a good drizzle of olive oil and a dash of vinegar may give this that extra bite you desire!
