Lemon Thyme Salmon over Wilted Garlic Greens

This kitchen experiment went Awesome!
Complexity Level:  Easy
Lemon Thyme Salmon over Wilted Garlic Greens
What You Need:
Salmon
10 oz. Salmon (serve whole or portion)
3 sprigs Fresh Thyme
1 Lemon
1/4 tsp Smoked Sea Salt*
Pinch Black Pepper
EV Olive Oil

Wilted Greens
3 cups Fresh Spinach
3 cloves Garlic, minced
1/4 cup Water
1 Shallot, minced
1/4 tsp Sea Salt
1 tsp Lemon Juice
EV Olive Oil

To start, pre-heat the oven to 350 degrees Fahrenheit.  Next, heat a skillet with 1 tsp EV Olive Oil over medium heat.  Meanwhile, rub the fresh salmon with juice from 1/2 the lemon, 1 sprig fresh thyme, the black pepper, and the smoked sea salt.  If you can't find smoked sea salt (look harder I promise) then you can use 2 dashes liquid smoke and regular sea salt.  Either way, get some smokey flavor on that fish!

When the oil in the skillet is hot, place the salmon skin side down and cook 3-4 minutes.  This is really to get an awesome caramelized texture and crunch on the skin.  After crisping squeeze lemon juice over the salmon.  This will begin to bubble, and it's a good thing!  Cover the skillet immediately with foil and place the entire thin into the oven.


This will bake in 10 minutes, so while finishing up start your greens.  Place the garlic cloves, shallot, and olive oil into a medium skillet and being to sauté.  Next, add the water and lemon juice, hen place the fresh spinach leaves into the skillet.  It may look like there is too much spinach, but trust me, they will wilt to literally 1/10th the size!  Simmer this until wilted.

Remove the salmon after 10 minutes and let sit for 2-3 more.  Place the spinach onto a plate (or paltes if not serving family style) and place your salmon portion over.  Squeeze once last squeeze over the fish with the lemon, add a touch of zest, and op with fresh thyme.
