Guest Post: College Budgeted Healthy Chicken Stir Fry

No one said a college budget should prevent good food.
And NO ONE said chicken and edamame can't be friends!
Complexity Level:  Easy
Healthy Chicken Stir Fry
What You Need:
1 cup shelled Edamame
2 Boneless Skinless Chicken Breasts, diced
1 cup Cooked Rice (pictures w/ instant microwavable rice added)
2 tbsp Soy Sauce*
1/4 cup minced Yellow Onion
2 tbsp Olive Oil
1 cup Frozen Broccoli

To start, add your olive oil and minced onions to a skillet and heat to saute.  After a few minutes, add your frozen broccoli, edamame, and raw chicken.  Heat to cook the chicken, about 10-15 minutes.  If needed, add 1-2 tbs of water to help steam the frozen vegetables.

Once cooked through, stir in the cooked rice, soy sauce, and if desired duck sauce.  To stick to a budget, you can totally reuse the soy and duck sauce packets from previous take out orders.

Heat for 2-3 more minutes then serve hot.  This sounds super simple... and it is!   But aside from how easy it is, the flavors are amazing and it is rich in protein!

We hope you enjoy!
Best,
