No one said a college budget should prevent good food.
And NO ONE said chicken and edamame can't be friends!
Complexity Level: Easy
Complexity Level: Easy
Healthy Chicken Stir Fry
What You Need:1 cup shelled Edamame
2 Boneless Skinless Chicken Breasts, diced
1 cup Cooked Rice (pictures w/ instant microwavable rice added)
2 tbsp Soy Sauce*
1/4 cup minced Yellow Onion
2 tbsp Olive Oil
1 cup Frozen Broccoli
To start, add your olive oil and minced onions to a skillet and heat to saute. After a few minutes, add your frozen broccoli, edamame, and raw chicken. Heat to cook the chicken, about 10-15 minutes. If needed, add 1-2 tbs of water to help steam the frozen vegetables.
Once cooked through, stir in the cooked rice, soy sauce, and if desired duck sauce. To stick to a budget, you can totally reuse the soy and duck sauce packets from previous take out orders.
We hope you enjoy!
Best,
