Creamy Brie Mashed Potatoes

Why did it take so long for me to think do this?
Complexity Level:  Easy
Creamy Brie Mashed Potatoes
What You Need:
5-6 Potaotes, peeled and roughly diced
1 tsp Salt
1/2 tsp Garlic Powder
1/2 tsp Black Pepper
3/4 cup Heavy Whipping Cream (half and Half or milk works too)
Water
4 tbsp Butter
5 oz. Brie, diced (keep the rind on the brie)

Ok, we all make mashed potatoes.  Fromt scratch, from instant flakes, from the drive thru....  But, today I was thinking about how much I love a delicious heap of mashed potatoes and how much I obsess over brie.

And then it hit me!  Why not mix the two together!?  It's such a simple idea but the rewards of it after... amazing!

To start, peel (you can leave the skins on for a rustic dish), dice, and bring to boil the potatoes in salted water.  When tender, drain and beat to a puree by adding the butter, cream, salt, garlic, and pepper.


Once fluffy and seasoned fold in the diced brie.  Let the heat of the potatoes melt the brie, and do not beat the potatoes with brie, as it will only be messy and stick to your beaters.

I know it's a simple add, but this was a mind blowing feast for me... I think I ate about 4 potatoes worth to myself!!
