It ain't yo' momma's chip dip, but it's a damn good one!
Complexity Level: EasyCowboy Caviar
What You Need:
1 can Black Beans, rinsed and drained
1 can Corn, drained
1 can Black Olives, sliced
1/2 cup Sliced Green Olives (more if you like 'em)
6 Avocados, diced
6 Roma Tomatoes, diced
1/2 Red or White Onion, finely chopped
1 bunch Cilantro, minced
Juice of 1 Lime
2 cloves Garlic, minced
1 cup Low-Fat Italian Dressing OR:
3/4 cup Water*
1 packet Italian Dressing Seasoning*
2 tbsp Olive Oil (optional)*
This is super simple, incredibly addictive, and man it's healthy! What a great dip to dive yourself into no matter the weather!
To start, drain and rinse your black beans and corn. Place them into a large mixing bowl. Next add the diced tomatoes, sliced olives, diced avocado, chopped onions, minced garlic, lime juice, and chopped cilantro.
Either way this is FABULOUS! Use it over a bed of lettuce to create a healthy mexican salad (you won't even need to add any more dressing!). I love this with White Corn or Blue COrn Tortilla chips!
We've even used it to make Vegan Burritos! Just add shredded lettuce -- Yum!
I served this in the avocado shells to make adorable personal sized dip cups. No one cares if you double dip your own stash!
