Thyme Rubbed London Broil w/ Brady Mushroom Reduction

Excellent for the season, and simple to make!
Complexity Level:  Easy
Thyme Rubbed London Broil w/ Brandy Mushroom Reduction
What You Need:
4-5 lb London Broil
Olive Oil
Sea Salt
Black Pepper
Dried Thyme

Brady Mushroom Reduction
1 tsp Bacon Grease (or Olive Oil)
2 Shallots, minced
2 cloves Garlic, Minced
2 cup Porcini (or button) Mushrooms, Sliced
Sea Salt
2/3 cup Brandy

To start, rub the beef with olive oil, sea salt, a pinch of black pepper, and thyme.  Sear each side to form a brown crust.  This is to lock in the juices and to ad a locked in flavor from the rub.

Next, bake the beef for 20 minutes at 375 degrees Fahrenheit.  Do not poke or press the beef, but rather after baking, let it sit at least 10 minutes before slicing.


While the beef is baking, add 2 minced shallots, 2 minced garlic cloves, 1 tbsp Olive Oil (or bacon grease), and 2 cups sliced mushrooms (porcini are best, but regular button work too!).  Sauté just a minute or tow, then add 2 cups Beef stock and 1/2 cup Brady.

Whisk to get all the brown pieces into the sauce.  These are serious bits of flavor.  Reduce for 15-20 minutes (about as long as the beef takes to cook).  If you need the sauce thick and velvety, whisk in about 1 tbsp of Flour Slurry (flour and water whisked together).  Add salt to taste.

Now that everything is ready this is best served with the mushroom sauce on top and your favorite sides!  Absolutely wonderful!


I hope you enjoy!  I recently made this for a winter party I catered, and it was a hit!  To keep warm we actually placed some of the beef into the sauce pot with the brandy sauce.  This also helped cook the beef more towards Medium for those who are not a Medium Rare type of Foodie!  Still EXCELLENT in flavor and juicy as ever ;)
