Rosemary and Garlic Roasted Potatoes

Crunchy, soft, flavorful, herbed goodness.  Yum.
Complexity Level:  Easy
Oven Roasted Garlic Rosemary Potatoes
What You Need:
10-12 Potatoes
3 Cloves Garlic, Minced
2 Shallots or 1/2 Yellow Onion, Minced
1 1/2 tsp Garlic Salt
1 tsp Black Pepper
1/4 cup Olive Oil
3 Sprigs Fresh Rosemary

These are seriously good eats.  TO start, dice your potatoes into fairly small pieces, rinse, and place into a large pot of salted water to boil.  Cook until fork tender, but be cautious to not over boil.  If you over boil, the potatoes will want to mash, and will not crisp, but rather crumble, in the oven.


I like the skin on my oven roasted potatoes, but if you do not, it is OK to peel!  While the potatoes are boiling, heat the over to 425 degrees Fahrenheit.  Finely chop the shallots or yellow onion, and mince 3 cloves of garlic.

At this point, I like to whisk my seasonings into my olive oil so when the potatoes are tossed with it, they are also flavored.  I also add the onions and garlic, so they stick to potatoes when tossed too.  Yum!

When the potatoes are fork tender, drain, and return to the pot.  Pour in the olive oil and toss to coat.  Pour onto a baking sheet and top with the sprigs of rosemary.  IF you want a bold rosemary flavor, I would add 1/2 tsp ground rosemary to the olive oil when seasoning it.

Bake for 45 minutes, stirring often enough so each side can brown.  I sometimes bake these for more than an hour, depending on just how crispy you like them.  After about 25 minutes, it is OK to remove the sprigs of Rosemary.  I only like a hint of rosemary, not the needles in my mouth, so thats why I say to use the sprigs whole, for easy removal.  Again, if you don't mind the needles, then add them directly to the olive oil when tossing.


Biggest tip:  The potatoes on the edges like to crisp faster, so when you stir, be sure to rotate when they are on the baking sheet.

Another Tip:  Broiling for a few minutes will add an extra crunch, if you (like me) love crispy potatoes!

Either way, these are fantastic, simple, and a great side to any feast.  The rosemary is so delicious... the crisp onions a treat....

  3. We eat a lot of potatoes during the week and I try my best not to let them get boring. I did potatoes like that before, but I used other herbs and have to say that combination of garlic and rosemary seem very intriguing. Thanks for inspiration, wishing you all the best!
