Orange Sugar Cookies with Craisins and Currants

Orange Sugar Cookies are good, and so are the fruitier ones!
Complexity Level:  Easy
Orange Sugar Cookies with Craisins and Currants
What You Need:
Cookies
1 cup (2 sticks) Butter
1 cup White Granulated Sugar
1 Egg
1 tbsp Orange Extract
Zest of 1 Orange
1 pinch Salt
3 tbsp Cream
3 cups Flour
1 1/2 tsp Baking Powder
1/2 cup Craisins
2/3 cup Dried Currants

Glaze:
1 cup Powdered sugar
1 tsp Cream
1 tsp Orange Extract

We will start by cutting the butter into the flour and baking powder.  To do this, add the flour and baking powder to a bowl, and using a fork or dough cuter, mash the butter into the flour.  Having the small pieces of butter in the dough will make pockets of flakiness when baking. Assure your butter is room temperature.

Next, in a smaller bowl, beat together the egg, sugar, orange extract, salt, zest, and cream.  Slowly fold this into the butter flour.  The dough will appear to be dry.  This is ok because the butter is there but not melted, so when it heats up, it flakes the cookies.   Finally add the dried fruits.

This next part sounds crazy but trust me!

Place a long sheet (about 2-3 feet) of plastic wrap down and lightly grease with cooking spray.  Dip your hands into flour, and form a few small balls of the dough, setting each one onto the plastic wrap.  press the balls together so soon they can be a log.  Wrap and roll to form a "slice and bake" type log of cookie dough.  Place onto a baking sheet and let chill for 1 hour or overnight.

After chilling, pre-heat oven to 400 degrees.   Bring the dough from out of the fridge and let sit at room temperature for 5 minutes.  Otherwise when you slice, it will crumble.

And if crumbles happen, just press them together and form a cookie in the palm of your hand!

Tip:  Use a sharp bread knife to slice.  Slice the cookies into desired thickness  homemade slice and bake!).  Bake 8-10 minutes then let cool.  The end pieces I smashed together and pressed with my palms to make a normal shaped cookie.  Leave no dough behind!

Once all the cookies are cooled, whisk together the glaze ingredients (Adding more powdered sugar if too runny) and brush each cookie.  These will be incredibly soft, because of how backwards the recipe was.

A soft cookie is a god cookie in my book, and anything that tastes like an orange dream is a winner!

I hope you enjoy!  Happy Baking!

Have a "Berry" Good Day!

  1. Thanks! They are actually quite zesty and soft. I'm super happy about how these turned out. Even 2 days later, and they are still amazing! Thanks for stopping by ;)
