Amazing No Bake Cheesecake Bites! (Cookies and Cream)

Cookies and Cream Cheesecake Bites that really do taste amazing!
No to be confused with a recipe for Oreo Balls.... those are weird tasting...
Complexity Level:  Intermediate
Amazing No Bake Cheesecake Bites! (Cookies and Cream)
What You Need:
Filling:
16 oz. Cream Cheese, room temperature
1 tbsp Vanilla Extract
1 1/2 cups Powdered Sugar
1 tbsp Heavy Cream
2 tbsp Hazelnut Syrup (a must, trust me)*
1 cup Crushed Oreos*
*you can use hazelnut coffee creamer to substitute the cream and hazelnut syrup, use 3 tbsp.


Topping:
16 oz. White Chocolate Melting Chips
Crushed Oreos

Ok, these are AMAZING!  Trust me as this recipes plays out. You may doubt yourself.  You may doubt me.  But it you TRUST me, I assure these are absolutely fabulous!

To start, beat the filling ingredients together in a large bowl.  Place into the freezer for 30 minutes.  This step is to chill the filling so you can handle it, although you are going to get your hands messy in a moment.


The next step, after chilling, is to roll the filling into balls.  It will stick to your hands a bit, but there are worse travesties in life I promise!  But, before plating to chill a second time, roll each of these in powdered sugar.  This is going to absorb the dampness on the outside of the balls.


After rolling all the filling -- (and you know what?  Make them however big or small you prefer, these are your bite's not mine!) -- place back into the freezer for 30 more minutes.

While those are chilling, start a double boiler so you can melt your dipping chocolate.




Dip each bite into the white chocolate, and place onto a pice of wax paper.  I Actually set some crushed oreos down first, so the bottoms get a bit, then sprinkle more on top while each is still wet.


These do need to be stored in the fridge.  The oreos may get soft in the fridge, so it's good to serve these asap once done.  However, 4 days after making them, my oreos still had a crunch.  I thank to containers I placed them in!

But no matter what, they are incredible!  And really do taste like mini cheesecake bites!

    I think I am just a fan of the tangy flavor the hazelnut gives this, making it taste baked!! But, we all share our unique tastes!!
