Winter Citrus, Feta, Mint, and Chive Salad w/ Sweet Balsamic Dressing

Winter Citrus, Feta, Mint, and Chive Salad
w/ Sweet Pomagranate Balsamic Dressing
What You Need:
5 cups Mized Greens
3 cups Baby Spinach
8 chives, chopped (+ 4 for presentation)
1 Grapefruit, skinned, seeded, and sliced
2 Oranges, skinned, seeded, and sliced
8 oz. Feta
1 tbsp Sugar
1/2 tsp Dried Mint
1/3 cup Sugar
3/4 cup Olive Oil
1 1/2 cup Pomegranate Balsamic Vinegar
Juice of 1 Tangerine
1 tsp Garlic Salt
4 Basil Leaves

This is incredibly simple!  For the dressing, place the sugar, vinegar, basil leaves, garlic salt, and tangerine juice into a blender or food processor.  Begin to blend.   While blending, slowly drizzle in the Olive Oil.  Only use as much olive oil as you feel fit (test the texture).  I like my dressing to me creamy and velvety, so about 3/4 cup was perfect.

No one will believe you made this.  It is so good, it tastes like you paid for it.  But it's our secret... and it's a fun and easy one!  Add Black Pepper and a Garlic Clove for a more robust dressing!

For the salad, first toss the grapefruit, orange, and mint with the sugar.  Next, toss the mixed greens, 1/2 of the sliced Grapefruits and Oranges, spinach, chives, and 3 oz. of the feta.  Place into a large serving bowl.

If you want to pre-dress this with the dressing do so now and right before serving.  If not serve with the dressing on the side. To make the salad more appealing to the eyes, decorate the top with the remaining fruit, feta, and chives.

I love this with simple Sage Olive Oil Croutons!
