Sweet Potato Hash Browns

Why haven't move people enjoyed this!?  It's AMAZING!
Complexity Level:  Easy
Sweet Potato Hash Browns
What You Need:
1 lb Sweet Potatoes, skinned and grated
3 Eggs (This makes the hash amazing and filling!)
1 tsp Sea Salt
1/2 tsp Black Pepper
1 1/2 Yellow Onions, grated
1 tsp Dried Marjoram (I know, its odd but amazing!)
1 clove Garlic, Minced

In a large bowl, combine all the ingredients.  Heat 2 tbsp oil and 1 tbsp butter in a large skillet.  Add 1/2 the mixture, stirring ofter to prevent burning.

Just as you do with scrambled eggs, you will want to cut this mixture apart often as it is cooking, to make a hash brown consistency and not a cakey one.

This will cook about 20 minutes on medium heat, as the sweet potatoes are a bit tougher and starchier than regular ones... But the hard work and labor is well worth it.

Serve with your favorite dipping sauce, or just eat as is!  I had to add ketchup to mine -- whenever I can get in some lycopene (and by that I mean tons of Ketchup) I add it!
