Maple Brown Sugar Oatmeal Cookies (w/ Flax Seeds!)

Also fabulous with Raisins added, and is a healthy breakfast on the go or as a dessert!
Complexity Level:  Easy
Maple and Brown Sugar Oatmeal Cookies w/ Flax Seeds
What You Need:
3 cups Flour
4 cups Uncooked Oats
1 cup Packed Dark Brown Sugar
1 1/4 cups Skim Milk (any milk will work!)
3/4 cups White Sugar
1 tbsp Maple Flavoring
2 tsp Baking Soda
2 tsp Cinnamon
1/2 cup Flax Seeds
2 tsp Salt
2 Eggs
1 stick Butter, melted
1/2 cup Canola Oil

To start, preheat the oven to 350 degrees Fahrenheit, 180 degrees Celsius.   In a large bowl, combine the baking soda, flour, cinnamon, and salt.  Set aside

In a second bowl, mix the eggs, sugars, and maple flavoring.  Next, mix in the milk, flax seeds, and oats.  Slowly stir in the flour mixture.

Spoon rounded tablespoons of the mixture onto a non-stick baking sheet.  Bake 15-18 minutes or until firm when poked and golden brown.


Its a traveling breakfast that will fill your morning needs ;)

  2. This looks terrific! My honey bunny and I had some cereal with flax seeds today and discussed that we need to add more to our diet for Omega 3 (I'm allergic to seafood). This might just do the trick!
