Jack-O-Lanterns to Homemade Pie

Turn that Pumpkin trash into tasty Treasure!

Halloween is over, but pumpkins are still a holiday treat.  I wish I thought to share this earlier, but it's a great tip for next year, and for any pumpkins you haven't carved yet.  I have to just say it first and foremost, I love the Fall.  I am obsessed with Halloween, Thanksgiving, and I enjoy putting up as many Christmas Lights as possible.   So this being said, I am eager to share so many of my Holiday tricks to save $$ and eat well.

So back to todays focus:  Pumpkins.  When you are carving your Halloween Jack-o-lanterns, save everything you carve out.  Really, save it!  Remove the seeds to roast, toss out the gooey guts, and save the "meat" portions.

I use everything so not to waste.  So, now that you have eye parts and mouth pieces, remove the outer skin them and place into a large pot.  Why not use this pumpkin to create your own Pumpkin Puree?  You do not have to by canned, and you can do this to save for all your Fall Pies, Cakes, Breads, and Meals.


Boil the pieces until fork tender, drain, and puree--I prefer a blender for this step.  You now have a basic pumpkin puree that was free, as you were carving those pumpkins, or at least buying those pumpkins anyways!  Use this puree for any of the following (or course there are unlimited recipes aside from these!):

This makes such an awesome dessert after all your hard work!  Yum!!


Or, in place of boiling and pureeing the Pumpkin, cut it up into 1 inch pieces and roast is with Olive Oil, Sea Salt, Pepper, and a Splash of Balsamic Vinegar.  Roast 45 minutes then drizzle with Honey and a pinch of Cinnamon.  Yum!

In other Words, save those pumpkin cut out pieces, and make yourself a fabulous treat!  I have shared this trick with many followers and friends alike, and am open for posting guests posts if you make this, or any of my recipes!
