Eggplant Wrapped Tofu

Elegance doesn't have to cost millions.
Complexity Level:  Easy
Eggplant Wrapped Tofu
What You Need:
1 Eggplant
1 Blcok Xtra Firm Tofu
Yellow Squash
Fresh Anise
1/2 Red Onion

Dipping Sauce
Soy Sauce

Grill Pan
Cooking Spray

To start, slice the eggplant into 1/4 inch slices.  Spray the grill panwith cooking spray, and grill each side of the eggplant.  Sprinkle with sea salt and set aside to cool.

Next, slice the tofu into bout 1 inch by 1 1/2 inch blocks.  Brush with soy sauce and spray lightly with the cooking spray.  Grill each side about 5 minutes and set aside. 

Slice the red onion and lightly grill for flavor.

Whisk together 1 tsp Soy Sauce, 1 tsp Honey, 1/2 tsp Sarancha Chili Sauce and pour into a small dipping bowl.  This will be your dipping sauce for the rollatini.

Finely slice the yellow squash and trim the ends of the fresh anise.  Roll the tofu, squash, grilled red onion, and anise tips in the grilled tofu.  To stand up, cut the bottom of the roll so it is even.

This is so gorgeous and simple... and HEALHY!  What a fun tapas style dish for any occasion ;)
