Busy Mornings + Healthy Grab and Go Breakfast Treats

This morning I woke up thinking about work, errands, and time.  Whether it be the busy holiday season, or just a rough week at work, we all find ourselves shorting the most important meal of the day:  Breakfast.

What did Breakfast do to us that we ignore him so often?  So quickly we leave him alone, waiting for our attention.

So in place of toast, coffee, or doughnuts I wondered:  How can I get my breakfast prepared so I have it on the go?  Of course I could hit up the drive thru and get a greasy start to my day, but that normally leaves me lagging behind the rest, and wishing I never did it.

So why not have something filling, healthy, and easy to grab on the way out the door?  

And the it hit me:  Maple Brown Sugar Oatmeal Cookies!!

But then in my head I could hear all the skeptics complaining about cookies for breakfast.  Are they not as guilty as biscuits and butter and grease?  

No.  Not these.  I decided to fashion a low fat cookie recipe and jazz it up with some flax seeds.  On top of what now sounded too healthy, I decided to add in my favorite oatmeal flavor:  Maple Brown Sugar. 


How can this not be an amazing treat?  And so I started.  Measuring out my perfect portions, hoping this experiment went well.   Trust me, I have had my mishaps, but from those I have learned so much about my kitchen laboratory and experiments.

And so I blended my ingredients, and found by surprise my recipe make close to 5 dozen.  But in light or the next few weeks to come, I didn't let that bring me down. 

Because as soon as my treat cooled and I tried my first bite.... It was like eating a big healthy bowl of oatmeal with a light crunch of flax seeds.  It was....  unbelievable!!

The maple flavor met the oats which fell in love with the sugars.  My tongue, the area this fusion exploded, was far from sad.



This breakfast snack became a success, and I realized I was ready to face the hustle bustel of the weeks to come.  In fact, I was inspired to take on the weekend and face the world!

I had to post this, I couldn't hold the secrets to a successful morning to myself.  And so I write to you:  Please take my word, these breakfast treats will make not just today, but the week's to come a bit more simple in the morning.... which leads to happier nights ;)

Recipe:

Maple and Brown Sugar Oatmeal Cookies w/ Flax Seeds
What You Need:
3 cups Flour
4 cups Uncooked Oats
1 cup Packed Dark Brown Sugar
1 1/4 cups Skim Milk (any milk will work!)
3/4 cups White Sugar
1 tbsp Maple Flavoring
2 tsp Baking Soda
2 tsp Cinnamon
1/2 cup Flax Seeds
2 tsp Salt
2 Eggs
1 stick Butter, melted
1/2 cup Canola Oil

To start, preheat the oven to 350 degrees Fahrenheit, 180 degrees Celsius.   In a large bowl, combine the baking soda, flour, cinnamon, and salt.  Set aside

In a second bowl, mix the eggs, sugars, and maple flavoring.  Next, mix in the milk, flax seeds, and oats.  Slowly stir in the flour mixture.

Spoon rounded tablespoons of the mixture onto a non-stick baking sheet.  Bake 15-18 minutes or until firm when poked and golden brown.


Its a traveling breakfast that will fill your morning needs ;)

  2. It is super healthy, and AWESOME with 1 cup raisins mixed in. I just didn't have any on hand :( My husband said he would prefer chocolate chips aded... but everything he eats he thinks chocolate chips would make a great addition lol!!!

    These are just sweet enough to be a cookie, but not too sweet to be a tooth ache. I hope you find them well ;)
