Bruschetta Pasta Salad

A deconstructed pasta sauce, in it's simple form.
Complexity Level:  Easy
Bruschetta Pasta Salad
What You Need:
1 lb. cooked Orzo
5 Roma Tomatoes, diced
1 Onion, finely chopped
1/2 cup chopped Basil
1 cup light Balsamic Vinaigrette*
1/2 tsp Sea Salt
1 tbsp Freshly Minced Oregano

To start, cook and cool the pasta.  Being a pasta salad, al dente is a perfect doneness.

Next, whisk the basil, vinaigrette, oregano, and sea salt.  Toss the orzo with the balsamic mixture, folding in the tomatoes and onions.  Let chill 1 hour.  Thw pasta will absorb the dressing, to which you can add more as needed.

This is a fresh, healthy pasta salad for every occasion!

Add some mini fresh Mozzarella and make this a caprese salad -- which is Awesome!

  1. Cool recipe! I like it because I bet it has lower fat than getting a big order of bruschetta at a restaurant.

  2. It does if you use the light vinaigrette, and its just as tasty ;) Plus the pasta helps make it healthier as its not oil garlic croustinis -- which are delicious don't get me wrong, but trust me, this is a good thing too!! ;)
