Stuffed Cabbage

An amazing dish that the family will love!
Complexity Level:  Intermediate
Stuffed Cabbage
What You Need:
1 lb Ground Pork Sausage*
1 lb. Ground Beef*
2 heads Cabbage (about 4 lbs)
2 Eggs
1 1/2 tsp Salt
1 1/2 tsp Pepper
2 tsp Garlic Powder
2 cans Tomato Soup
1 26 oz can Diced Tomatoes
1 cup cooked Rice
1 Large Onion, minced
Chives (garnish)
1 16 oz Can pureed Tomatoes
Water
You can also use Quinoa, Veggie Stock, and Soy Grounds for A veggie Alternative!
*You don't have do use both pork and beef.  One or the other works great alone too!

To start, boil the cabbage until tender, removing layers as they soften and placing them into an ice bath to chill. As the cabbage cooks, mix the pork, beef, salt, pepper, minced onion, rice, half of the diced tomatoes, and garlic powder in a large mixing bowl. 


Next, place approximately ¼ cup pork filling into each cabbage leaf, and roll, stem side first, tucking the ends in with your thumb after the roll is made. Place each roll with the rolled, open end down into a large roaster. Whisk the remaining diced tomatoes, the tomato puree, and tomato soup with 1 cup of water.  Cover, and place into oven at 325°F for 2 hours. 

Remove from oven and serve alongside mashed potatoes for a fabulous meal, or eat alone for a smaller portion! Garnish with chives or simply place diced tomatoes on top!

Not a Cabbage Kid? Use this to stuff Bell Peppers! Fantastic flavor changer! Really, the bell pepper will give this dish a completely different taste! Be sure to use some minced bell pepper in the stuffing as well for an additional twist!

Not a Porker? Use beef! There should never be a hesitation to substitute your favorite meat for a dish! Plus, trial and error make better your experience!


Not a Tomato Fan?  Try using chicken stock in place of the pureed tomato and only use 1 can of tomato soup.  This will give you a more meaty, and bolder flavor, without all the tomato red!
