Parmesan Peppercorn Ranch Pasta Salad

A huge hit with friends!
Complexity Level:  Easy
Parmesan Peppercorn Ranch Pasta Salad
What You Need:
1 lb. Penne Pasta
1 Cucumber, finely chopped
1 Red Onion, finely chopped
3 Beefsteak Tomatoes, chopped
1/2 cup Sliced Black Olives
1/2 cup Mayonnaise
1/2 Sour Cream
1/3 cup Buttermilk, or plain milk
1/2 cup Parmesan Cheese, finely grated
1 packet Ranch Seasoning
1 tsp Freshly ground Black Peppercorns
Salt to taste

To start, cook the paste until it is al dente.  Remove and drain.  Run under cold water to stop the cooking process and cool pasta.

Meanwhile dice and chop your veggies and set in a large bowl.  In a small bowl whisk the milk, mayo, sour cream, ranch seasoning, peppercorns, and parmesan, until well combined.

Place cold pasta into the large bowl with the dived veggies and toss all with the ranch mixture.  Let chill at least 1 hour.  Salt to taste if needed.  Try upping the entertainment factor and serve this in an edible Parmesan Cheese Bowl.  Make mini bowls in a muffin tin for an edible side for any party!

This was such a hug hit it was gone before our guests were!  Good thing we always have a back up plan, and serve up some Carrot Ginger Pie!
