Grilled Pumpkin Hummus


Fall for this Dip, again and a again!
Complexity Level:  Easy

Grilled Pumpkin Hummus
What You Need:
1 lb pumpkin, Grilled, skinned, and chilled
3 Garlic Cloves
1 tsp Salt
1 tbsp Fresh Rosemary
Water
2 tbsp Olive Oil
1 tbsp tahini

To start, chop the pumpkin into 1 inch thick slices.  Lightly brush with olive oil, and grill to roast each side.  Let cool over night, then remove the skin and place the pumpkin meat into a blender.
Add the salt, abuot 1/2 cup water, garlic, tahini, and rosemary to the blender and puree.  Slowly add the olive oil and continue to blend until smooth and creamy -- about 2 minutes.

Serve with your favorite dippers -- I prefer pretzel crisps and  pumpkin beer!
