Curry and Chive Egg Salad

Simple, flavorful, exciting and delicious!
Curry and Chive Egg Salad
What You Need:
Curry Mayonnaise:
3/4 cup Mayo
1 tbsp Mild Curry
1 pinch Cayenne pepper (optional)
Pinch Salt
Pinch Black Pepper
Curry and Chive Egg Salad:
3 Eggs, Hard Boiled and diced
Handful of Chives, Diced (add as many as you like)
Pinch Red Pepper Flakes
Pinch of Black Pepper
Pinch Garlic Powder

To start, make the curry mayo:
Mix together curry mayo ingredients and enjoy! That simple, that great! Use in recipes like Curry Chicken Salad, Curry N’ Chive Egg Salad, or make up your own using tuna and your favorite veggies! Add ¾ cup sour cream and 2 tbsp minced cilantro to make a curry dip! You can even add ½ cup coconut milk to make a coco-curry dressing that is just fabulous as a marinade for chicken! There is never a limit!
Next, fold ingredients together with the curry mayo so as to not break up the eggs. If desired add some minced celery to add a crunch! Pictured garnished with thinly sliced baby carrots and cucumber slices!

Make it a sandwich! Pictured as a dip with cucumbers for a light-carb fare, but why not turn this up a level with fresh pitas or tortilla, tomato slices, lettuce, and red onion rings for a veggie friendly meal! Meatless and protein rich, this salad shall never fail!

Crunch it up! Add crushed cashews and minced red and green peppers to add crunch, coor, and a delicious freshness.
