Chocolate Mousse Pie

Creamy, Decadent, Soft, Mouth-Watering Goodness...
Complexity Level:  Intermediate
Chocolate Mousse Pie
What You Need:
Filling
3 Eggs
3/4 cup Sugar
3/4 cup Milk
1 cup Semi-Sweet Chocolate Chips
1 tsp Vanilla
2 cups Heavy Whipping Cream
*1/2 tsp Cinnamon gives this a wonderful Zing!
**use 1/2 cup Milk and 1/4 cup cold coffee for a mocha mousse pie!


Crust
4 tbsp Butter, Melted
1 cup Chocolate Cookies, crushed
*Or use graham crackers for a different twist

To start, mix the cookie crumbs with the melted butter and press into a pie pan.  Bake at 350 degrees Fahrenheit for 8 minutes, remove and let cool.

Next, whisk together the sugar, milk, and eggs in a medium saucepan.  Continuously stir and cook over low heat, until the mixture is thick enough to coat a spoon.  This will take about 20-25 minutes.  Do no rush this step.  Turning up the heat will only give you scrambled eggs.

Remove the saucepan from the heat and whisk in the vanilla and chocolate chips until melted.  Let cool a few minutes, stirring often.

Whip the heavy whipping cream and fold in the chocolate mixture, and pour into the cooled crust.

Chill at least 1 hour, best overnight.  Serve anytime for an amazing treat the whole family will love!
