Chocolate Chip Oatmeal Cookies

Taking an old fashioned favorite, and making it modern!
Complexity Level:  Easy
Chocolate Chip Oatmeal Cookies
What you Need:
1 cup White Granulated Sugar
2 Eggs
1 cup Packed Brown Sugar
1 12oz. Bag Semi-Sweet Chocolate Chips
1 cup (sticks) Room temperature Butter
2 cups All Purpose Flour
3 cups Quick Oats
Pinch Salt
1 1/2 tsp Cinnamon
Pinch Ground Nutmeg
1/2 tsp Baking Powder

To start, in a large mixing bowl, add the butter, white sugar, and brown sugar. Mix until completely combined. One at a time mix the eggs into this mixture, you can also mix in the vanilla with the eggs.  Now, mix in the flour in parts. 1 cup, mix. Next cup, mix. rest, mix. You can mix the cinnamon, nutmeg, and baking powder during this process. Next, mix in the 3 cups of oats. The dough will at first seem too dry, but I assure you, once you mix it all together, it is perfect.

Mix it up-- At this point, you can add raisins, cranberries, dried cherries, chocolate chips, seeds, etc.

Chill for at least 1 hour. This is an important step as it helps the oats bind to the rest. You can chill overnight or even a day ahead of time if needed! Unlike many cookies, when you go to bake thee, roll into balls, then smush to flatten. You can do this between your hands.

Bake at 375 degrees for 8-12 minutes, or until the bottoms begin to turn golden brown.  Remove and let cool.  These are super declicious and fun for all to enjoy!
