Bacon Wrapped Hickory Smoked Meatloaf

Its the manly thing to do.
Complexity Level:  Easy
Bacon Wrapped Hickory Smoked Meatloaf
What You Need:
2 lbs Ground Beef
2 Eggs
1/2 cup Plain Bread Crumbs
1/2 tsp Liquid Smoke, Hickory
1 tbsp Brown Sugar
1 pack Beefy Onion Soup Mix
1/4 cup Ketchup
1 tsp Salt
1 tsp Black Pepper
1 tsp Dried Parsley
1/2 tsp Garlic Powder
1 lb. Hickory Bacon (peppered Bacon works great too!)

In a large mixing bowl, combine all ingredients but the Bacon.  Shape into a loaf form and place into a 9X13 baking dish.  Wrap the loaf with the bacon slice by slice, until completely encased.  Sprinkle with a pinch of black pepper for a tasty addition.  Cover with aluminum foil to lock in the heat.

Bake at 350 degrees fahrenheit for 1 hour.  Remove the foil, brush the Bacon with honey, and bake 10 more minutes to crisp the bacon.  Can use the broil setting but be careful not to burn!

Serve hot with your favorite sides... Excellent with Cheddar Bacon Mashed Potatoes.
