Spiced Wheat Berry Kale Salad

Spiced Wheat Berry Kale Salad
What You Need:
1 cup Raw Wheat Berries
1 lb. Raw Kale, chopped
1 can Garbanzo Beans
1 Red Onion, diced
1 Cauliflower, chopped
1 tbsp Curry
1 tsp Ground Corrianderi
1/2 tsp Granulated Garlic
1/2 tsp Onion Powder
1/2 cup Apple Cider Vinegar
1 tsp Sea Salt
1 tsp Black Pepper
1/3 lb. Carrots, finely diced

Begin by cooking the wheat berries.  These take a bit to cook, so its best to begin cooking them in advance.  Add 3 cups vegetable stock in a large pot, and the 1 cup wheat berries.  Bring to boil, stir, lower to a simmer and cover.  Stir every 30 minutes, adding ater if needed.  These will take about 2 hours to soften. 

Meanwhile, chop and steam your cauliflower and Kale.  Cool and set aside.

In a small bowl, whish your vinegar, curry, corriander, salt, pepper, garlic, and onion powder.  Pout over the cauliflower and kale.  Dice your red onion and carrots, drain and rinse garbanzo beans, and fold all into kale mixture. 

Once tender, rinse the wheat berries under cold water.  Fold ino kale and carrot mixture and add salt to taste.   Chill over night.

Before serving stir well.  Great as a side salad and atop your favorite jerk seasoned proteins.
