Salsa Rojo

Dip into a simpler day!
Complexity Level:  Easy
Salsa Rojo
What You Need:
5 Ripe Tomaotes, finely diced
4 cloves Garlic, minced
½ Red or Yellow Onion, thinly chopped
½ cup Cilantro, chopped
1 Jalapeño, thinly chopped, seeded
½ tsp Kosher Salt
Mix all ingredients in a medium bowl. Add a variety of hot peppers to increase spice! Excellent with a Mexican Cervesa and a lime! Use as a dip, or top off baked chicken or tofu for a tex mex flare!  Even tasty with eggs for breakfast!
