Roasted Corn Guacamole

Guacamole kissed with fire roasted corn... Yeah it's kinda a big deal!
Complexity Level:  Easy
Roasted Corn Guacamole
What You Need:
3 Ripe Avocados
2 tbsp Minced Fresh Cilanto
Juice of 1 Lime
2 Roma Tomatos
1/4 Red Onion
2 Cloves Garlic, minced
2 ears of corn (or 1 can drained)

Start by roasting the corn.  I like to grill 2 ears of corn for a flame kissed flavor, however you can also just pan roast fresh or canned corn to give it a golden hue.


Next, dice the tomatoes and the red onion. Next, cut the avocados in half, remove the seed, then scoop the avocado into a medium sized bowl.

Squeeze the lime juice over the avocado, sprinkle with salt, and mash until smooth. Gently fold in the minced cilantro, roasted corn, garlic, and diced vegetables. Serve with fresh tortillas, pretzels, or smear onto your favorite sandwiches and wraps for a tasty treat!

You can add a Jalapeño to sice up the flavor!
