What You Need:
2 sticks Butter, room temperature
3 cups Flour
1 Egg
1 tsp Baking Powder
1/2 tsp Baking Soda
1 cup Sugar Substitute
2 tbsp Vanilla
3 tbsp Milk/ Cream
1/2 cup Dried Cranberries
8 oz (2/3 bag) White Chocolate Chips
Mix the baking powder, baking soda, and flour in a large bowl. Cut the room temperature butter into the flour, baking soda, baking powder mix (this means use a fork and combine so the flour is clumpy). In a medium bowl, whisk the egg, sugar substitute, milk/cream, and vanilla. Mix into butter mixture.
Fold the cranberries and white chocolate chips into the mixture (you can chill if planning on baking at a later time). Pre-heat over to 375 degrees Fahrenheit. You can mold the dough into triangles for traditional scone shape, but me, I like big messy homemade looking scones.

Bake for 16-19 minutes, or until brown. Remove from oven and let cool. Yum!
