Coconut Rice

What You Need:
Here are the simple simple measurements:

1 tsp Salt
1 can Coconut Milk
Re-fill that very can once with Stock or Water (I use Vegetable Stock)
Use this can to measure 1 can of dried rice

Bring to a boil, stir, cover, and lower to medium heat. Do not touch this for 10 minutes.
After 10 minutes, you may stir and cover again. Normally you never
tough rice, but the coconut milk will need 1 stir break. After 6 more minutes you will be
thinking, hmm, the rice is almost done... Remove from heat and let it sit for 2 minutes!
You want the rice to be almost done, but not mush. Pour all the rice onto a baking sheet or plate, and space it out to cool. I stirred in 1 tsp minced cilantro because cilantro and coconut are best friends, and curry too. For my house tonight, this rice will soon be swimming in a Curried Pork and a curried Tofu sauce.

Enjoy!
XOXO,
